It's dried mozz, you can get both types in the glorious NY of C. For the fresh mozz, they just add a little special something on top of the pizza kit. Extra fancy.

You have no fucking clue what a New York style pizza is because you've likely never had one.

New York pizza tends to have a rather thin crust, it should be less than one-fourth-inch thick until you get about 1 to 1 1/2 inches from the edge. Also the pizzas tend to be 14 to 18 inches in diameter. They tend to use a mozzarella with low moisture and there is little sauce, but enough to make sure you know it's there. You can't say New York style pizza doesn't exist, and there's nothing like it.
