One thing it took me a while to realise is how you have to start thinking about plating well before you even start cooking, like planning a garnish with vegetable trimmings or deciding what size you prep things so they sit nicely together. There's also the rule of three idea from flower arrangement of having large/medium/small elements as well as tall/low/background elements.
