I felt like a fucking genius for thinking to offset the baconstrips like that, by the way. I don't usually rolls stuff in bacon but I was worried the meat would get dry on the outside before it was cooked on the inside. And I do like bacon.
Trussed it up, which was also a bit more clumsy than usual. It definitely needs the string to maintain structure I think. Or some meat needles.
