Except when your customer doesn't give half a fuck about "simple" styles and only comes to your brewery to drink the fire haze and barrel aged stouts that you do better than anyone else in the region. There's a reason why most of today's top tier craft breweries don't produce a core pils or lager and only bring these out once or twice per year. They just don't sell and they're not what craft customers want to see. Nobody's losing their mind and driving hundreds of miles to cop a Great Notion pils, and the brewery knows this.
Places that do what you say and produce beer for casuals are not catering to their core audience, but the guy who gets dragged along to the brewery with his IPA loving buddies. See pic related.
