So the place already exists, and It's a really simple diner menu that's actually almost perfect. I probably wouldn't change the menu at all. But I would add various specials for season meals, baked goods, and soups. It would be a great combo of comfort and familiarity with couple more unique or creative items weekly. As an example I make a pretty legit pozole. This is also super economical because you can use some of the pork from the roasted shoulder to make cubanos, carnitas, and pulled pork sandwiches. pozole I made recently, definitely one of my favorite soups to make and super easy. And you can use the left over roasted pork shoulder to make carnitas or cubanos. Insane how much food a $19 pork shoulder makes.

I made pozole recently and it's super easy and cheap as hell. I would suggest roasting the pork shoulder first, then you can use 1/2 the meat for carnitas and the other half to make the soup.

Pic rel, 9lb pork shoulder cost $18, made food for a bunch of people for multiple days. I gave away a few quarts of soup just so it didn't go to waste.

not always intentionally, but usually if you're cooking something well, the color will follow. Made some pozole recently that looked pretty good.
