Food Service is populated mainly by high-on felons and drop-outs with low IQ. There are some sincere people who are really trying but don't have the background in Attention to Detail, and studying under a Taskmaster beats this into them. It's the same principle as the Military and I'v'e done both military service and food service (kek).
I've met and worked with some real artists from extremely harsh backgrounds and they have violent/drug felonies to work out. Being a chef allows them to express their intelligence and drive and it's a wonderful thing to watch and experience.
I just don't like the commercialized version of it.

I hope everyone here gets a chance to work with an American chef who rose him/herself up out of the shit on pure desire. It's out there.

But, you have to beat the shit out of people for not paying attention to detail in cleaning, prep, etc. When you do, you'll have an efficient kitchen outfitted by bull-dyke lesbians and felons. People who are denied expressing their excellence in other venues, at the office or even in a factory which doesn't exist anymore.

I think Bourdain describes this but i really don't know haven't read his books.
