Another thing I like to do with watermelon is to pickle/preserve its rind.
Remove the white rind from the red flesh, peel off a layer or two of the green skin and marinate the rind in seasoned vinegar as you would cucumber. It's nice that way.
Alternately, you can salt-and-sugar cure it, after which, you can slice it as a stir-fry ingredient, such as in pic related (pickled watermelon rind with pork).

Does English have a separate word for soured foods that aren't pickled or are they all just "pickles?"
I speak English pretty damned well, I'd say, but I can't figure out if there is another word for things like sauerkraut/kimchi and salted turnip/radish and stuff.
I ask, because I make watermelon rinds both as pickles and as salted food.
