smoking or coals with woodchips is ideal

but this is what i usually do

massage mustard on both sides of the rib, massage dry rub ontop of the mustard

crank propane grill on high and let that sucker get as hot as possible without causing a meltdown

grill ribs until charred and browned on both sides

transer to oven roasting pan boneside touching the pan, put a little liquid on the bottom enough to keep it moist you can use a little vinegar, orange juice apple juice, water, beef stock whatever. i usually put ornage juice water and apple cider vinegar. roast in a preheated oven anywhere from 225-300 depending on when you want to serve them and how tender you like them. When the meat is shrinking away from the bone you know its tender. 300 could be as soon as an hour or hour and a half. you can even turn it up to 350 or 400 for less time i guess but watch to make sure it doesnt over roast
