Not the guy you're responding to, but pic related is a pretty good storebought sauce. I'd like to ferment my own hot sauces someday and make something similar.

But I agree with your statements, I dont see myself using anything hotter than habenero or red savinas for cooking, if I cant at least use a whole pepper then whats the point?
