>2000s: Huy Fong sriracha "cock sauce" becomes common in hole-in-the-wall ethnic restaurants, and increasingly beloved by hipsters as "that hard-to-pronounce condiment that normies haven't heard of".
>2010s: Led by Huy Fong's success, sriracha goes mainstream in America. Subway adds sriracha to their menu, shitty memes like "sriracha beer" are produced, and every major sauce brand develops their own competing sriracha. Huy Fong becomes a common supermarket item and makes bank selling t-shirts and koozies to Redditors.
>2020s: Hipsters start abandoning Huy Fong, allegedly because they switched pepper suppliers, but actually because it's now a normie brand, and not even spicy enough to be included on HOT ONES®™. When the pepper shortage strikes, ever-contrarian hipsters switch to other brands, even cheap ones like Tabasco (see also: "the PBR effect"), pretending that those were always better, even though most would not exist without Huy Fong's example (or at least be widely available).
You either die a hero, or live long enough to become the villain. Can we admit that Huy Fong had a nice run while it lasted? They earned their place in the Hall of Sauce Fame.
