Whenever I try to roast chicken (slow at 350F or fast at 450F, doesn't matter) the dark meat has this obnoxious alkaline taste. It's strongest nearest the bone but it permeates the entire leg/thigh. What the fuck is this and how do I get rid of it? I live in Idaho and I roast it the same day I get it from the store (no brine) so it's not like it's some third-world dumpster chicken.
