What do we think of Mercer knives? ... They and the victorinox have chef's knives with similar profiles (which I really like), but the victorinox ones are slightly more expensive here, and have wooden handles which are less durable.

Also: 6 inch or 8 inch? I tend to rock when I slice, rather than lift and chop, if that makes a difference.
