And this is my favorite cayenne based sauce. Well, it's actually a blend of cayenne and tabasco peppers. Fucking glorious Louisiana Gold. Wonderful flavor and just enough heat. This is my go-to table sauce, along with the aforementioned Jardine's Texas Kicker.

This is true.
I'm assuming you've had dirty rice. Dirty rice and etouffee are two of my staple meals, because it's cheap, nutritious, and fucking DELICIOUS. For dirty rice to be good, it HAS to be made with chicken livers. If it doesn't have chicken liver in it, it's just not going to be good. But, for people who don't liver, they probably would never notice it anyway, because you basically puree the livers into a loose paste before adding them so you can't really tell they're in there, but they add so much flavor. Fuck, now I want some dirty rice.
Also, I recommend you make your own cajun seasoning, don't buy the prepackaged kinds, they have too much salt in them and not enough of the good herbs and spices.
And, as far as a table sauce to shake on your cajun food, if you feel like it needs extra zing, I recommend pic related.

This stuff right here.
By far my favorite hot sauce ever. It's not super hot, but it has the best flavor of any hot sauce I've tried, and it goes on/in just about anything. I could fucking drink it, I love it so much.
