Most of the blowback against beige seems to come from the growth of cubicles in offices, which started off in a variety of colors but eventually settled on dirty beige almost everywhere. People got sick of seeing it for 8+ hours each day, wall to wall, everywhere, which caused it to become synonymous with soulless design.
It's fun to look back at other time periods such as the 1980s and see stores like Banana Republic that were packed to the faux rafters with khaki and earth tones.
