on the other hand, try some thick cut marinated in balsamic vinegar and brown sugar, then baked on a wire rack, with a little water or beer (beer is good, since you can then use the drippings for other stuff, like dressing) in the pan to keep the drippings from scorching, at 200 for as long as it takes to get crisp
