Obviously a lot of fried stuff, much of which is novelty things like oreos, coke, butter, things wrapped in bacon but then more normal things like burgers, hot dogs, nachos, and various kinds of fried dough like funnel cakes. Wisconsin being dairy land has a lot of dairy products like fried cheese curds, but one thing that is a draw is the cream puff building. I forget what they call them in France but they are basically the same thing

Fairs really are different than what normally passes as street food in America. You are unlikely to see any vegetables except deep fried pickles or onion rings if you count that

Our state fair is OK, pretty standard shit. They do serve pic related though at this huge facility and that's nice but nothing special

These are cream puffs, and are very similar to choux à la crème from France, however I have not seen them outside of Wisconsin and yes I travel a lot so I'm pretty sure the rest of the US isn't super into them

The best cheese in america comes from Cali and WI. Wisconsin only has a reputation as the cheese state because they make the most. I would say 20 years ago they weren't that great but a lot of microcheeseries have popped up that have won international awards.

But i think on the balance it's no better than any other state per lb of cheese produced, its just they have a lot of northern euro immigrants and a fairly hilly landscape that makes it difficult to grow a lot of crops
