Yeah "brushing" wax on killed two wheels via bacterial contamination i only dip from now on at 180f iirc because thats a 6 log+ reduction of pathogens and such, also started adding natamycin to my brine for non geotrichum inoculated cheeses

Yes the appenzeller was good although said lees (spent brewing yeast) added a chocolate tasting finish which was nice but not what i wanted. This time I went full lazyman mode and used jaegermister mixed with lees that were saturated in blackberry vinegar to keep them inert instead of using 11 herbs and spices and fresh dead yeast.
Should be ready around march i will post abt it then
Cantal will be ready in august im excited for it. Took 300lbs of my workout weights to press it down
