Lamb or more specifically mutton tastes funky if you don't know how to finish them before butcher or know how to work with anything other than super fast raised beef that was likely finished on the last holidays candy. Most people don't therefore lamb gets a bad rap.
I finish with olive tree rufage and 17% 4-way livestock grain and mostly alfalfa. Makes for far superior meat. The best way to really take enhance the gamey flavor to where it is pleasant is with smoke. I'm sorry you've been abused by irresponsible asshats that don't know shit about meat.

Smoked mutton burgers
Ground the meat with 7% Lamb fat instead of mutton fat. Better than beef. Added my own special spice mix that includes a little MSG.
Pan seared in bacon grease, before a 30 minute hang out in the standing propane smoker at 250° F, rolled heavy apple wood smoke for 15 minutes.
