Hrm. Smažený sýr is basically the equivalent of mozzarella bread sticks, in a slab form. It's flour, then egg wash, then bread crumbs, and it's deep fried, not just cooked on each side pan-fried.
The cheese itself is most similar to Edam, which is the skimmed version of gouda, which changes the melting point when fried (vs gouda) and browns up better than a whole milk gouda cheese. It can also be made with the czech form of camenbet, which restaurants have on hand to be served as a different appetizer marinated with lots of relishy garnishes like pickled peppers and served with good Czech sourdough rye bread.

I think since slav food is so meat centric, it's kind of the restaurant or street food menu default item for those who are vegan, or just can't face some pork products that day. It's certainly craveable, but kind of a weird something-is-missing sandwich when served that way, for sure. It will be served with a salad, and copious dressing or homemade mayonnaise.
