>I understand the red ones are sweet from beet juice or slices. Is this true? I don't want to dig up a bunch of recipes and figure out all this for myself. I'd like someone to explain them to me.
Never tried with beets, first time I heard about it and I will try.

The texture is a little more rubberized than just boiled
>Does the process take a long time as with standard pickles?
I found that they taste better after a week but you can still eat them a day after you made them.
