all the mexican styles of preparing scrambled eggs:
>lightly pan fry corn tortilla strips in the pan before adding the egg batter
>add refried black or pinto beans to the pan as the eggs start to harden and mix, sprinkle on cotija cheese before serving. a side of pickled serranos or jalapen'os are the best acid to cut these with.
>drown eggs in wet black or pinto beans, can go from soupiness mostly cooked out to very soupy beans with eggs in them
>ahogados/drowned: drown the eggs in pan in a quality thick red or green salsa when they start to harden, boil the sauce a bit, chunky salsas work too
>lightly fry soyrizo in the pan before adding egg batter
>mexican style: lightly fry diced onion, diced fresh serranos or jalapen'os, diced tomatoes in the pan before adding the batter

also add a fried egg to reheated leftover pizza

youre obviously flipping them too early. you need to wait until the bottom has cooked long enough it has hardened without burning. you probably need to lower your heat too.
