I know I am going to get alot of flack for this since this place is olive oil crazy, but
Canola has much less saturated and monounsaturated fat and more vitamin E and K than olive oil. I mainly use canola which is a healthy oil because it is very low in saturated fat (7%). Like olive oil, it is high in monounsaturated fat (63%) but is much better for cooking with. Especially at high temps. Canola oil also contains a significant level of polyunsaturated omega-3 fat (9-11%), In addition, canola oil contains significant amounts of phytosterols (about 0.9% by weight) that reduce the absorption of cholesterol into the body. So basically, it's the best and healthiest oil for me. Also better priced. I am hoping that by using olive oil it will taste or work differently in my italian related cooking.

They should make sushi rolls with less/no rice.

Like if you want sashimi, but a little more taste/variety without the unhealthy ingredient rice.

Imagine breadless sandwiches with a clear edible plastic holding it all together.
