The one that keeps getting posted because he looks so messed up was dried in salt.
I think I might try putting the new one in a jar with vodka or something.
Most people seem to leave them out and let nature take its course.

I am looking forward to see how well he holds up into the new year, anon.
I salt one of mine but I think I might preserve the next one in alcohol and see what happens.

He was kept in salt for a year and is now perfectly dry and crunchy.
He rattles when I shake him, which I take to be the seeds.

I preserved mine from last year after cooking him inside a duck.
