Store in a cool dark place. Ive heard of drying potatoes for long term storage but never tried it. Ive eaten potatos after 2 months of storage, just peel and make sure to cut out all of the eyes. Periodically check for rotten ones, because one gone rotten will speed up the decay of the rest of them.
