Flies as you know walk on walls and ceilings that's because they have an adhesive that is on their feet that allows them to do that. When a fly lands on say a pile of dogshit or in a trash dumpster small particles of that bacteria are then transported from their feet to wherever they land next. So if a fly lands on your food it's quite possible he just deposited some fecal matter or bacteria from the trash on your food that's why it's a problem if there's flies in a restaurant or where food is being prepared.
