This is what the tray looked like before I started to boil the carcass. I am unsure if I want to roast the vegetables separately or together. If I roast them separately, I can probably fit another onion and have better spacing of all the items and better control the doneness, but then they will not roast in the fat of the bird. As I’m typing this, I remember that there are many extra pieces of loose fat that I can render, and toss the veggies in, if desired.
