I googled to know what was that red liquid that comes out of steak meat when it's cooked

One source says it's myoglobin

>The liquid you see trickling onto your chopping board or plate is something called myoglobin – a protein found in muscle tissue. Myoglobin carries oxygen through muscle, and it contains a red pigment.

Another source says it's interstitial liquid

>It is called extravascular fluid. This fluid may mix with traces of blood and take on a red color. The extravascular fluid filling the spaces between the cells is known as interstitial fluid and resembles blood plasma. But it is not blood!

Who's in the wrong here ? Or is it the same ?
