Yeah pretty much. It's very rich with a lot of flavors coming together, though the sauerkraut mellows a bit after the simmering.
To deglaze I just used the onions themselves, in the remaining fat. As the moisture releases from them it's plenty to deglaze and take up the fond. But also keep in mind, simmering with a jar of white-wine-vinegsr-sauerkraut, the whole pot ended up spotless by the time I was done anyway.
You could use some favorite spices in the mix if you wanted but the jar of sauerkraut pretty much handles the sodium content, I wouldn't add salt to it.
