they're talking about bottles that you keep in your kitchen and they know that most people have no idea what they're doing so those bottles are exposed to light, heat and oxygen obviously because they're being opened all the time.
none of that applies to canisters that you store in a cool, dark, dry place and only open it like once a month to refill your olive oil dispenser.
I've bought many canisters and there is literally no difference after half a year.

the regular 500ml bottles of olive oil that you usually get at the grocery store are all either low quality and taste mid at best or they're extremely expensive (per liter) so canisters from greece are the best option in my opinion, at least in europe. maybe the prices are completely different in america due to shipping

a carbon steel knife is about half as expensive as a knife of the same quality (sharpness) that won't rust. I still don't think it's worth it
