Now that the dust has settled and we all agree that beans don't belong within a mile of a bowl of chili, what are some secret ingredients you use that spice up your bowl o red?

For me, it's
>chovies
>red thai chili paste
>a dash of cocao powder

I always stew soupbones in too but that's not really a secret ingredient.
