So, beans are still soaking, and I'd like some input on this particular recipe:

>1 lb pinto beans, soaked over night
>put into pot with water covering it by 2 inches
>partially or fully cook 5-6 pieces of bacon, add to beans
>dice half an onion, fry it up in some bacon fat, add that
>mince 2-3 garlic cloves, fry that in same bacon fat, add that
>dice up bell pepper, add that
>heat until boiling, then turn down to a simmer
>Simmer for several hours until a thick bean gravy has formed

Sound right? What do I need to change?
