>1c long-grain rice (I use basmati)
>put in big fucking measuring cup (3c or bigger)
>rinse/drain until water runs clear (2-3 times)
>fill measuring cup (with rice in) to 2.5c
>pour entire thing in cooking pot
>heat to high
>throw in kefir lime leaf, small spoon of coconut oil, salt (1tsp? I don't measure)
>when boiling, put on low, cover with lid, place big heavy thing on top (I use the measuring cup)
>18 mins
>turn off heat, rest for 5 mins
>fluff with fork, serve.
