While I disagree with your point about fresh curds (I like them), beer battered ones are amazing. Whenever I have friends from out of state visit I always make them have some and they fall in love

Deep fried white cheese curds with ketchup and spicy buttermilk dressing to dip them in.

Not pictured: Loaded Bloody Mary with chaser.

I very, very rarely drink but if it's a hot summer day and I'm with people and mosey down to a local bar, it's fried cheese curds and a bloody Mary (spicy) for lunch.

And a brat with kraut and onions. That's what I think of when I think Wisconsin hometown food.
