I have leftover taco meat, so I threw together some tacos. Pic related.

The taco meat I made with instructions from Ethan Chlebowski's meal prep video. It's actually very well made, and has totally changed how I view meal prep. It's basically braised beef finished off in an adobo chili sauce. It's delicious, and since I only made enough for a few meals, I can switch to a different beef dish instantly without worrying about waste.

Then I added in some Cotija Mexican cheese, curtosey from the Mexican grocery store on the other side of town. I finished it off with lettuce, onions, tomatoes, and avocado, and some left over Chipotle chips + their hot salsa, and some nacho cheese dip. Overall, a pretty depressing meal for myself on New Years, but it's not the most depressing thing I've eating on New Years, trust me on that.
