So tonight I'm making some homemade tomato soup for my mother exclusively using ingredients from her garden. I'm also going to make some grilled cheese to pair with it. The soup I've made plenty of times, but I haven't made a grilled cheese since I was a kid.

What's the best "adult" grilled cheese?

>french bread 1/2 inch thick
>thinly sliced gouda cheese
>lightly spread Dijon mustard on the inside
>medium spread butter on the outside
>pepper and paprika in melted butter

Or

>shredded cheddar
>lightly spread mayo on the outside
>butter inside
