once upon a time all meat was cut with at least 1/4 inch of fat on it and everyone was happy because it tasted good. then the mean ol corporate interest corn and sugar demonized fat and lobbied congress to declare it "unhealthy" and no one noticed till they all got fat and could not figure out why. Now no one sells meat with a proper amount of fat on it unless you go to a butcher shop (if they exist in your city).

But yes you can ask the idiots at the supermarket for off cuts from sirloin, ribeye, or chuck. They might be able to give it to you.

My favorite for flavor is sirloin, ribeye for smoothness, and chuck has a good chew.

though pork fat is mighty tasty.

the right way to make scrambled eggs is:
2 eggs
poor in heavy cream the size of one egg yolk.
salt
pepper
beat with fork
add diced velveeta and diced cooked sausage patty.
lots of butter in the pan.
cook just until the eggs are no longer runny. eat on toast. mfw
