I discovered Belgian chocolate thanks to Toblerone. Never going back to chocolate that tastes like plastic.

You need a whole range of professional ingredients and factory-tier equipment that you wont use elsewhere in the kitchen like glucose, invert sugar, gelling/colouring/flavouring agents, molds etc etc... which you'll use for liquorice, gummy bears and lollipops that don't come close to factory quality.

Is right. Chocolate truffles are Belgian though, not Brazilian. Top tier Belgian chocolate is completely handmade and sometimes disarmingly simple to make. Truffles are one example, crispy bacon, cauliflower or yuzu pralines are also fairly simple to make while the result is surprisingly good as long as you have top grade chocolate (Callebaut).
