200g fatty cottage cheese, egg, 2 tbsp flour, sugar/salt
mix, form pancakes, fry
serve with smetana and jam

If you use good fatty cottage cheese you end up with a crisp exterior and very creamy almost liquid innards, but then you need some practice to not fuck it up. It's amazing.
