You can cook lean steak on high heat with smoke everywhere but you'll have to flip it earlier.
It's a trade-off between a better sear and steak's evenness.
You generally don't need to worry about "bacteria" in fresh beef - you could eat it raw just fine as long as it was stored properly. Searing it basically means you'll kill everything that's on the surface, so even if it wasn't stored properly - you're fine.

For very fatty steaks, though, like wagyu shit and whatnot - you have to go low and slow. Otherwise, you'll get a chunk of lard that tastes of disappointment.
It'll eventually get a sear even on low heat, so you don't have to worry about that.

Speaking of digital thermometers, why are they so fucking slow and inaccurate?
I'd love to actually be able to monitor steak's temperature closely but the best I can do is guess by looking at the rate it increases.
