Do you have a coffee grinder or a mortar and pestle? You can dry all sorts of veggies and either save them in jars as little pieces or grind them into a powder for use in soups, stews, and baked goods. It is amazing.

Yay or nay?

I've been growing my own veggies and eating as many as I can, but I can't eat it all fresh. I've home canned 1000s of jars of veggies, stew, soups, etc. Now, I've been dehydrating them. I'll either crush them up and use them as thickening-seasonings or leave them in bits and chunks to rehydrate in impromptu soups and stews.

It is really amazing how many tomatoes you can dehydrate and stuff into a pint jar.
