they are simmer safe, so i keep the temp lower. i find that putting them in some plastic and freezing and popping em out like an ice cube for vacuum sealing works the best for soups and stuff like that. cheap vacuum sealer runs like a champ, don't need the expensive ones

hey OP, so I have a chest freezer and a cheapo vacuum sealer. what i freeze is mostly soups, stews and chili. i make huge batches, last chili was ~26 quarts. then i put them into tupperware containers, freeze them, pop the frozen square out like a giant ice cube and vacuum seal it.

the vacuum sealer bags are sold as "Sous-vide safe" so i just put a bag in a warm water bath and simmer on the stove when i want to eat it. probably 20-30 minutes until you have a fully thawed fresh meal in a plastic bag.

i usually have the following in my freezer:

chili (meat and beans style for extra filling)
beef stew (french country style with a lot wine for de-glazing)
chicken noodle soup
lentil soup (ham bone based stock and lots ham in it)
chicken curry (thai style coconut milk curry)
spaghetti sauce (mushrooms and meat)
homemade savory pie (lamb and rosemary)
lasagna squares (mix of meat and veggie-cheese lasagna)

glad i inspired a couple people towards cooking chili and freezing it, OP it makes me sad yours is too spicy. i had that happen a few times with fresh peppers.

the only thing i would add as a positive to this method is that you can thaw the blocks right in the bag and it is super convenient as a leftover.
