potter here. historically there have been problems with lead glazes and some cobalt ware. lots of contemporary glazes use materials that are hazardous in dry form when you're mixing the glaze (always wear your respirator!) and may offgas in the kiln (always properly ventilate your kiln!) but are totally inert once fired. it's true what the other anon said about salt glazes--it is especially important to have a salt kiln well ventilated. if glazes are not fired to the proper temperature for that glaze and clay body the ware might not be fully vitrified but that is a skill issue.
