Can we have a bread / baking thread?

I have my first stand mixer coming in the mail this week, so I want to bake a fuckload of bread with it, because hot / fresh bread is amazing.

Does anyone have tips for a bread virgin or resources I can use to read up about it so that I can get a good crumb, good rise, good flavor etc?

Personal recipes?

I'll take all the help I can get, since baking seems to be half art, half science.

So here's the thing. I've gotten the idea that I want to bake my own bread. No shitty plain white bread. I want to bake flavorful, healthy loaves. I want to incorporate interesting ingredients, like fruit, seeds, and nuts.

I don't have much baking experience, but I've been cooking for myself for about twenty years.

So what are some of the interesting, healthy, and creative ways you make bread? Pics (for inspiration), recipes, and tips are welcome.

Sup /ck/

I have some bread that's rising right now in the kitchen, but my roomate broke the stove last night and he still hasn't fixed it and probably won't by the time I go to bake the bread. I have a toaster oven though. I can't fit the entire thing in it unfortunately. Will it affect the bread if I separate the batter (?) into smaller pieces, let it rise for a bit and then put it in? There isn't really anything in it besides whole wheat flour, all purpose flour, salt, yeast, and water.
