OP if you're ever in Saint Louis there's the St. Paul Sandwich, which is essentially egg foo-young turned into a sandwich.

I had it twice from a place called Chong Wah on Olive Blvd, I wasn't impressed at all by the combo but I get the appeal of it being in sandwich form.
