When I make polenta, I put cold water and the polenta flour in a pot and keep stirring until it boils and thickens, usually 5 minutes. And no, I'm not using any special polenta flour, just regular. And I'm not dead yet.

What is this 40 minutes stirring autism?

I heard Pepin saying that a bechamel with cheese is a mornay, one with chicken stock (and no milk) is a veloute, one with water is a bastard.

But now, apparently there is a sauce blanche which, according to my googling, can be made with water or stock.
