It's an attempt to sound authentic. I've lived in the Chesapeake region most my life and had crab cakes all over the place. Most restaurants that do Maryland style crab cakes use jumbo lump, mayo, mustard, old bay seasoning, and breadcrumbs mixed loose and formed into patties. Lemon and tartar on the side.

Some places however will basically make hush puppies with one piece of crab in it and call it a crab cake. Usually if it's under $10-12 bucks it's going to be deep fried garbage.
