Eggs are fucking weird, they're slimy or gelatinous and their taste is farty

How do you make good over easy eggs? Every time I try the "splash water and cover" method, it just becomes sunny side up eggs with over cooked yolks, and everytime I try to flip the eggs, I struggle so hard to get beneath the yolk and half the time either break it, or take too much time trying to get under it without breaking it, that in either case results in an overcooked egg
