You're right in that the store writes off the cost of the syrup as an expense, regardless of whether somebody drinks it. The example you're giving is less the store deciding the syrup is worthless and more them taking advantage of literal addicts who would drink a big gulp on a regular basis. They can afford a smaller margin if it is consistent.
