Why doesn't freeze dried food expire? It's pretty common knowledge that even the best conventionally canned or dehydrated foods will only last 3-5 years (though I've seen 7 or longer) if they contain fats, because the fats will go bad. Most freeze dried foods are advertised to last 25 years minimum, and some say they'll last well over 40.

Does anyone know why this fat spoilage is circumvented by freeze drying? Is it really as simple as more complete desiccation? Can't complete desiccation be accomplished by conventional dehydration?

the answer is: not much

So would I. Or at least the stuff remade today as faithfully to the original stuff as possible. WWII rations that lasted to today must be rancid or hard tack.
