My mom went on a raw vegan kick when I was in middle school, and she made raw versions of a lot of foods, including alfredo.

The answer is awful. It tastes awful. untoasted sunflower seed and raw cashew paste and lemon on cold, drippy, raw shredded zucchini tastes awful. Her "rawcipies" didn't always taste bad, in fact the donut holes one, which was just date and almond paste with coconut, tasted pretty good. But none of them tasted like the actual food they were trying to mimic.
If you want to go raw vegan, just eat some damn fruits and nuts. Don't try and make stuff into food it will never be.
